Mediterranean Quinoa Salad with Olives, Feta, and Lemon Vinaigrette
Looking for a flavorful and satisfying salad? Try this Thai Peanut Noodle Salad with Chicken, Cabbage, and Peppers! Loaded with tender chicken, crunchy cabbage and bell peppers, and tossed in a creamy peanut dressing, this dish is sure to be a hit. Ingredients:

8 oz. of rice noodles

1 lb. of boneless, skinless chicken breasts, cut into thin strips

2 tbsp. of vegetable oil

1 red bell pepper, thinly sliced

1 green bell pepper, thinly sliced

1 small head of cabbage, thinly sliced

1/4 cup of chopped fresh cilantro
-
1/4 cup of chopped green onions
-
1/2 cup of roasted peanuts, chopped
For the dressing:

1/2 cup of creamy peanut butter
-
1/4 cup of soy sauce
-
1/4 cup of rice vinegar
-
2 tbsp. of honey
-
1 tbsp. of sesame oil
-
1 tsp. of grated ginger
-
2 garlic cloves, minced
-
1/4 cup of water
Instructions
- Cook the rice noodles according to the package directions. Drain and rinse under cold water to stop the cooking process. Set aside.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken strips and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside.
- In the same skillet, add the sliced bell peppers and cabbage. Cook until slightly softened, about 3-4 minutes. Remove from the skillet and set aside.
- To make the dressing, whisk together the peanut butter, soy sauce, rice vinegar, honey, sesame oil, grated ginger, minced garlic, and water in a small bowl until well combined.
- In a large mixing bowl, combine the cooked noodles, cooked chicken, cooked bell peppers and cabbage, chopped cilantro, and chopped green onions. Pour the dressing over the top and toss until everything is well coated.
- Serve the Thai peanut noodle salad topped with chopped peanuts.

Note: You can adjust the amount of dressing and add more or less water to get the consistency you desire. Additionally, you can add other ingredients such as sliced carrots or snap peas for extra crunch and flavor.
